Apple Egg Breakfast
Straight from the family cookbook!
1/2 cup butter
2-3 apples, peeled and thinly sliced
6 eggs, beaten
1 1/2 cups milk
1 cup flour
3 tablespoons sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon cinnamon
4 tablespoons brown sugar
Melt butter in a 9x13 baking dish by placing in the oven while preheating to 425°F.
Add the apple slices to the pan (it should sizzle!) and remove it from the oven immediately.
Mix together eggs and milk. Beat in flour, sugar, vanilla extract, salt, and 1/4 teaspoon cinnamon.
Pour batter over apples and sprinkle with brown sugar and remaining 1/4 teaspoon cinnamon.
Bake at 425°F for 20 minutes or until puffed and brown.
Serve immediately.
